In celebration of women, we, at The Chai Bar, are launching a brand new blend - Aprajita Blue Pea Tea. This blend is all about women. Being a woman-owned small business, we wanted to bring clitoria on board The Chai Bar Blends. Aprajita means power to the woman or undefeated woman. It is inspired by The Goddess "Devi's" undefeated strength in feminity. 

The blend is made using the flower petals of the plant known as Clitoria ternatea. Also known as butterfly blue tea flower, blue pea flower, or Asian pigeonwings. 

Blue Pea Vine

The genus Clitoria grows in tropical and subtropical environments across the world. Today, the populations of C. ternatea is pantropical, as facilitated by key characteristics of the species: tolerance to drought conditions, non-reliance on specific pollinators because of self-pollination, and nitrogen fixation capability. 

Although these vines are hardy, drought-tolerant, and grow in full sun to full shade, they are slow to germinate, and each sapling takes about four weeks to immerge from the seed. The sapling can establish only when the temperature is between 24–32°C, and when seeds are sown in moist soil. 

These vines grow like wildflowers in Asia; there are about 40 varieties grown worldwide. A delicate green vine grows on anything it can climb over; it's low maintenance and drought tolerant. The trailing vine produces vibrant violet-blue blooms. Clitoria ternatea has long been cultivated as a forage crop for cattle, especially in dry regions due to its adaptability in the arid climate. As the name suggests, butterfly pea flowers are favored by butterflies, but birds and bees love them, too, and so do humans. Butterfly pea flowers bloom only late into the night and are harvested between midnight and three in the morning. 

This plant is also beneficial as a rotation crop. The Clitoria ternatea roots produce large round nodules known to house nitrogen-fixing bacteria. 

While blue pea tea might be trending in the western world right now, in South Asian culture, this tea has been prized for centuries for its agricultural and medical applications. This ranges from use as a fodder and nitrogen-fixing crop, an eco-friendly insecticide, to traditional medicine and even food coloring and cosmetics.

When the petals are infused in hot water, the flower lends a stunning, rich blue color. Squeeze in lemon, and the tea turns lavender; these mystical color changes are all science; lemon slices cause the tea to become more acidic, changing the pH level resulting in a purplish hue.

Add hibiscus, and it turns crimson. Adding hibiscus brightens it adding a Fuschia shade. This beau'tea is sure to make a stunning addition to a high-tea spread or tea party.

The bright blue tea's flavor is earthy and woody, similar to green tea; in Asia, this tea is commonly mixed with lemongrass for an extra health boost. In Thailand, the drink is prepared with honey, cinnamon, mint, and passionfruit. At The Chai Bar, we blend it with our secret herbs and spices and top the brew with maple syrup.

  1. To ensure you get the best results, make sure the blend you use is fresh, do not store the blend for more than 12 months as the flowers lose their flavor. 

How to Make

  • To make HOT blue tea, add 2 heaped tsp Blue Tea Blend to 1 cup boiling water and let it steep for 15 mins.
  • To make ICED blue tea, add 2 heaped tsp Blue Tea Blend to 1 cup boiling water and let it steep for 15 mins then chill for 4 hours.
