Hi Tea'm, 

How's it going for you guys? We have been having fun in the sun. Ok, so business was affected by the pandemic, but we stayed afloat, we survived, we made some new friends along the way, and here we are, seeing the warm, glorious light at the end of this topsy turvy tunnel. 

We deserve to have some fun, don't we? After all, we did just emerge from a global pandemic. 

We know it's far from over, especially because our friends and families in India still see high numbers, we haven't met them in what feels like forever, and we feel super low at times. But you know what, we aren't going to waste the wonderful summer air sulking. We would rather be out enjoying some chilled chai in the company of these we love. 

We have some tealicious ideas for berry patriotea'c treats and can't wait to get the party started.

If you are feeling #extra, freeze hibiscus tea ice cubes for a colorful display and watch your brew change hues.

If you're looking for something with a bit of a kick to it and don't want to go the Herbal Tea root(see what we did there), we have the perfect recipe for you. A tea'vine berry black tea using Astiva.

If you haven't tried Astitva, you're missing out. This blend can be brewed with your choice of botanicals, herbs, spices, with or without milk, chilled, hot, or boozy. Making the most of berry season, we decided to make a classic berry black brew. 

This Chilled Chai uses seasonal summer berries like strawberries, blueberries, blackberries, and raspberries. You can add cherries, orange peel, or any fruit of your choice to the mix. 

To brew a berry berry Chai, first, we need to make a berry simple syrup. 

Berry Simple Syrup Ingredients :

Make the berry simple syrup.

  • Add berries, sugar, and water over heat and bring to a boil, simmer for 20 mins stirring occasionally, strain using a fine mesh, and cool. 

Ingredients for Berry Black Chilled Chai 

2Tbsp Astiva - The Original Blend 

2Tbsp Sugar 

2Cups Water 

Instructions to Brew Berry Black Chilled Chai :

  • Bring water to a boil 
  • Add Astitva Chai 
  • Simmer 2 mins extra for a bold brew 
  • Strain 
  • Chill 

Assemble 

In a tall pitcher, add the Chilled Chai, berry simple syrup, and chill overnight.

Serve in a glass with 2Tbsp frozen berries.  

What would pair better with an earthy-sweet and tart tea than a sweet and tart dessert? We love pairing Berry black tea with mixed berry tarts. The best part is, you can make this tart using some tea and carry the flavors on through your food. 

If you prepare this dish for a 4th of July par'tea, your guests are in for a visual treat; arrange the berries so each tart reflects red, white, and blue for a patrio'tea'c display of colors

Have we sold you on the idea of mixed berry tarts yet? Let us make it even more tempting. If you'd like to avoid making tarts yourself, you can simply buy ready-made tart shells; in fact, you can even buy ready-made stuffing for your tart. We have all the flavoring secrets for you below. 

Ingredients for Tart Shell

Instructions for Tart Shell 

  1. Beat butter and sugar until smooth. 
  2. Blend all-purpose flour, whole wheat flour, salt, baking soda, and Astitva Chai Blend. 
  3. Add to butter-sugar and mix until combined.
  4. Flatten, wrap in cling film and chill for 3 hours 
  5. Roll out on a lightly flour surface.
  6.  Use a plastic lid from a large yogurt container to mark 8 circles.
  7. Cut them out with a paring knife and press into 4 1/2-inch pans with removable bottoms. Prick each shell all over with a fork and chill 30 minutes.
  8. Preheat oven to 325°F. Bake chilled shells until deep golden brown and dry in appearance, about 25 minutes. Cool on a wire rack.

Ingredients for the stuffing 

  1. To make the filling: Mix the softened cream cheese with the sugar until well blended, making sure to scrape the sides and bottom of the bowl.
  2. Mix in the eggs one at a time, then the cream and Tea.
  3. Pour the filling into the baked crust. Reduce the oven heat to 350°F. Bake for 20 to 25 minutes, till the tart is nearly set; a tiny spot in the middle will remain soft-looking.
  4. Remove from the oven, cool at room temperature for 1 hour; then refrigerate till ready to serve.

Assemble your tarts right before serving, fill with stuffing, and add your choice of seasonal berries on top.
