By now, you know, our tea'licious brew is made using flowers of a climbing vine native to Asia. 

The delicate vine with vibrant true blue flowers grows abundantly all over India. Being a diverse nation, India has 22-second languages, that's right, twenty-two and over a hundred and twenty-one mother tongues or sub-languages. 

 

While Hindi is the national language, and India is the second-largest English-speaking country in the world, each State has its own language. 
Most people know at least three languages. Madura and I speak Hindi, English, and Marathi. 

 

Point being, the brew'tea'ful Clitoria ternatea is known by many names in India. In English, it goes by butterfly pea (because of its buttery-like appearance), blue pea or cordofan pea (because of its origins tracing back to the pea family), or Asian pigeon wings (because of its vivid blue) 

 

In Hindi, it is also known as Aparajitha or Koyala; in Marathi (the State language of our home state), it is known as Gokarni and fed to bunnies, or it is known as Shankpushpi, meaning conch like flower. It has many other names across the country like Sanghu pushpam (Malayalam), Dintena (Telugu), Girikarnika, Koyal, Dintena, Asphota, Vishnukranta, Mahashveta, and I am sure we are missing some. 

 

The fact that it has so many names and grows so abundantly in India only exemplifies this flowering vine's benefits and its use in traditional herbal medicine. 

 

The best way to extract the flowers' medicinal properties is by adding them to boiling water and letting them steep. It is often mixed with lemongrass to add health benefits and a fresh flavor to the brew; this tea is a rare treat - a feast for your eyes and body.

Transformational Tea 

INGREDIENTS

Aprajita- Butterfly Blue Brew 2Tbsp, 

Lemon 1Tbsp, 

Honey/ Maple Syrup 1Tbsp.

INSTRUCTIONS 

  • To make HOT blue tea, add 2 heaped tsp Blue Tea Blend to 1 cup boiling water and let it steep for 15 mins.
  • To make ICED blue tea, add 2 heaped tsp Blue Tea Blend to 1 cup boiling water and let it steep for 15 mins then chill for 4 hours.
  • Add Honey / Maple Syrup
  • Then add lemon juice and watch the blue brew magically transform to purple.

Mixologists Meadow 2.0

Try this tweaked recipe for The Chai Bar's MIXOLOGISTS MEADOW 

Refreshing and light, this is the perfect cocktail for brunch or high tea. 

Originally made with The Chai Bar's Mangalyam Blend, let's switch it up with blue pea tea, lava lavender sugar, lemon, and lavender-infused vodka. 
Aprajita Blue Pea Tea has a woody, herbal flavor mixed with fresh, zingy lemongrass, zesty lime, and sweet lavender; this is the perfect purple brew. 

 

INGREDIENTS 
  • 2-tablespoons Aprajita
  • 1.5-parts lavender-infused vodka
  • 1/2-part lemon (about 1 tbsp per drink)
  • 4 tbsp lava lavender sugar
  • 3-cups water
  • 1 cup lavender buds

INSTRUCTIONS 

TEAP: To infuse the vodka, pour your favorite premium vodka over the lavender buds, seal the lid tightly, shake a few times and store the jar in a cool, dark place for 3 to 5 days.

  • To make ICED blue tea, add 2 heaped tsp Blue Tea Blend to 1 cup boiling water and let it steep for 15 mins then chill for 4 hours.
  •  In a cocktail shaker, combine ice, vodka, Butterfly Blue Brew, Lava Lavender Sugar. Shake and strain into the cocktail glass, squeeze in the lemon juice, watch the color transform and develop as the juice blends. 
TEAP: To be #fancyshmancy, rim your glass with lavender sugar.

Crimson Conch Cocktail 

Want to be bold and make a statement? Try making this crimson, blue pea cocktail. 

INGREDIENTS

  • 2-tablespoons Aprajita
  • 2-large dried edible hibiscus flowers 
  • 2 tbsp sugar 
  • 30 mil gin 

INSTRUCTIONS

  • To make ICED blue tea, add 2 heaped tsp Blue Tea Blend, hibiscus flowers, and sugar to 1 cup boiling water and let it steep for 15 mins then chill for 4 hours.
  • Strain, shake with gin and ice. 
  • Serve in a tall glass with a cocktail umbrella. 

 

Levitated Lemonade 

Want to up the level on the wow factor? Make an intergalactic, cosmic chilled chai lemonade using Aprajita. 

INGREDIENTS

  • 2-tablespoons Aprajita
  • 2 cups lemonade 
  • 1/2 cup soda/ pop
  • Lemon Vodka 

INSTRUCTIONS

  • To make ICED blue tea, add 2 heaped tsp Blue Tea Blend and sugar to 1 cup boiling water and let it steep for 15 mins then chill for 4 hours. 
  • Transfer the chilled blue brew to an ice tray and let it turn to blue ice cubes.
  • Shake your lemon vodka with lemonade.
  • Coarsely crush your blue pea ice in a blender. 
  • Add bp ice to a tall glass, top off with vodka lemonade and finish with a splash of soda.
