Kumaon farmers wait until early June to craft this tea, allowing the leaf to develop a hardy body as the plant accelerates into summer’s furious growth phase. Just before the monsoons arrive, tea makers hand-pluck the bushes, and they make this tea with only the highest quality leaves harvested. In processing, the tea makers are vigilant throughout to ensure a long wither, light roll, and hot yet short oxidization. The result is a balanced, layered, juicy black tea.
