Derived from the fruit of the Illicium verum plant, the star anise is a star-shaped pod containing a pea-sized seed in each of its points. It was so highly valued in ancient times that it was frequently used for tithes, offerings, and payment of taxes in Palestine.
Before they are ripened, the star anise pods are harvested and then layed in the sun to dry until they are a dark rusty brown color.
This versatile spice has been used for its culinary and medicinal properties throughout Chinese history. It is said to improve digestion, alleviate cramps, and reduce nausea. Even better when infused in tea, it helps reduce bloating, gas, and constipation.
It also became a common spice in Indian cuisine where it is used in the spice blend ‘garam masala’ and added to pumpkin pie and gingerbread for a flavorful layer.
Our star anise has a rich, nutty licorice essence, derived from anethol oil found in the anise seed, while also imparting a faint, smoky aroma. It has a multifaceted flavor and aroma perfect for sweet and savory dishes alike.
